Inspired by North Carolina artist and designer Bob Timberlake, Timberlake’s Restaurant at Chetola Resort uses the artist’s deeply rooted love of food as the impetus behind the distinctive and locally flavored menu. Whether buying from local and regional farmers directly or through local farm cooperatives, the culinary staff at Timberlake’s focuses on flavor and sustainability, using fresh local produce and herbs, a variety of Ashe County cheeses, and humanely raised meats from North Carolina farms. From Mesquite-dusted shrimp and salads of mountain-grown spinach, to Carolina-raised trout, roasted Carolina quail and daily chef specials, each dish is one to be savored. North Carolina craft beers from Blowing Rock Ale and Appalachian Mountain Brewery are always on tap in Headwaters Pub, as well as other NC ales, such as Green Man Brewing, Mother Earth and Aviator Brewing.Breakfast is served daily in Timberlake’s and dinner is served nightly (seasonal hours apply). Lunch is also served seasonally in Headwaters Pub. Timberlake’s features outstanding buffets on Mother's Day, Easter Sunday, Thanksgiving, Christmas, New Year's Eve, and during special events such as Symphony by the Lake.
